Kway chap - flat rice sheets (similar to noodles) served in a broth. The accompaniments are what make Kway Chap unique; it often includes a variety of offal (like pig intestines, stomach, and skin), hard-boiled eggs, tofu, and sometimes meat like braised duck or pork.
